Caitlin Nelson, 21, of Clark, N.J., died Sunday after she collapsed during the pancake-eating contest. She also had food allergies.
Nelson was studying social work and was a member of a sorority. She was taking part in a Greek Life event.
She was rushed to the hospital, where she died Sunday.
She was 5 when her father died in the Sept. 11 terror attack on the World Trade Center.
